Hot Maine Lobster Dip
This delicious recipe is sure to be a hit at any party. Boil an inch of salted water in a large stock pot. Add 2 live lobsters and cover, steaming until the shells are deep red, about 10 minutes. After allowing lobster to cool, crack the shells and pick out the meat, including tails, claws, and knuckles. Tear the lobster meat into small pieces, and set aside.
In a bowl, combine 16 ounces softened cream cheese, 2 minced shallots, 1 minced clove of garlic, 1 tablespoon horseradish, 1 tablespoon Worcestershire, 1/8 teaspoon cayenne, 1 teaspoon hot sauce, and salt and pepper to taste. Mix in the lobster meat. Pour into a baking dish, and chill in the refrigerator for two hours.
Cook, uncovered, at 375 degrees for about 25 minutes, or until lobster dip is hot and bubbly. Hollow out a round shaped sourdough bread and fill it with dip. Serve the delicious dip with fresh bread or crackers.
Lobster Crostini
For a simple but sophisticated appetizer, try these easy to make recipe.
Boil salted water in a large pot. Add one 1 ¼ pound live lobster, and boil for 5 to 6 minutes. It should be bright red. Remove the lobster to cool, then take the claw and tail meat from the shell, and dice into small pieces.
Cut 2 small, ripe tomatoes in half horizontally, and squeeze out the juice and seeds into a heavy 1-quart saucepan. Over low heat, add 2 tablespoons cold unsalted butter (cut into small pieces), whisking constantly until warm. Add the diced lobster meat to the saucepan.
Cut 2 center slices, about ½-inch thick, from a round sourdough country bread. Cut each slice in two, and lightly toast. Place some of the lobster meat onto each piece, and slowly pour on the butter mixture with a spoon. Sprinkle with salt and pepper, add a drizzle of olive oil, and place a sprig of basil on each toast.
Serve while warm, and provide your guests with cutlery and napkins because this can get messy!
